Among the latest in our production, Dolcetto di Capra is a table cheese with a soft paste. Derived from goat’s milk. The paste is uniform and compact, the color varies from white to straw yellow. The crust is thin, with a soft consistency and white color, with molds with a characteristic white penicillium color. Its taste is sweet, with a very slight bitter hint, the smell is that strong and characteristic of goat’s milk products.
It’s sold in circular wheels with a weight which varies from 0,30 to 0,50 Kg.
